i'm not exactly the healthiest of people, although i do manage to maintain a balance. so when i decided to make a salad for dinner one night, i decided to make it as delicious as possible.
when it comes to salads, i like them simple. sometimes i find, especially at restaurants, they'll put too many ingredients in the bowl and it becomes one huge soggy - sometimes colourful - mess. the tastes becomes overpowering, and i'm left with several bits and pieces (pine nuts are the most common) off to the side where they don't interfere with what should have been a really good side dish/meal.
when i make salads, i like to have maximum 2 - 3 ingredients (besides the lettuce) in the bowl because i know what i like, and i know what tastes good.
that way i get to savour it all.
Ingredients:
1 carrot
3 slices of feta cheese
1 fig
handful of rocket
Dressing:
extra virgin olive oil
organic coconut vinegar (balsamic style)
himalayan rock salt
